A healthy version of our Swedish chocolate balls, and they taste so good! A perfect healthy snack if you are a chocolate lover like me. The kids like them too. I found the recipe at this inspirational Swedish health blog AnjaForsnors. For recipe in Swedish click here.
Raw chocolate balls
3/4 cup almonds
3/4 cup raw cashew nuts
12 fresh dates (press out the pit)
3 tablespoon coconut oil
1/4 cup raw cocoa (more if you want them richer)
1 teaspoon vanilla suger or honey
1 tablespoon cold coffee
a pinch of salt
2-4 tablespoon water
(I also added 1/2 cup of oats)
1. Mix the almonds and cashews in a food processor.
2. Add the rest except for the coconut flakes. Start with 2 tablespoons of water and add more if needed, it’s suppose to be a little bit sticky, make small balls and roll them in coconut. Let them rest in the fridge for about 15 minutes. You can also freeze them, and save for later!
