Dan Dan Noodles (4 port)  (scroll down for English)

  • 1 msk riven färsk ingefära
  • 2 vitlöksklyftor
  • 1/2 lime
  • 1 tsk sambal oelek
  • 3 msk japansk soja
  • 1 dl jordnötssmör
  • 1 tsk strösocker
  • 1/2 purjolök
  • 4 port risnudlar
  • 250 g körsbärstomater
  • 250 g champinjoner
  • 250 g sojabönor/edamame
  • 1 msk olja
  • 65 g babyspenat
  1. Dressing: skala och riv ingefäran, pressa i vitlök och lime, blanda i sambal oelek, soja, jordnötssmör, socker och i med finstrimlad purjolök.
  2. Koka nudlarna.
  3. Dela tomaterna.
  4. Dela champinjonerna och fräs med tinade sojabönor i oljan.
  5. Blanda i dressingen och nudlarna, och sist i med tomaterna och spenaten. Servera varm el kall, med lite flingsalt på toppen!

Dan Dan Noodles (4 portions)

  • 1 tbls fresh shredded ginger
  • 2 garlic coves
  • 1/2 lime
  • 1 tsp sambal oelek
  • 3 tbls Japanese soy sauce
  • 1/2 cup peanut butter
  • 1 tsp sugar
  • 1/2 leek
  • 4 portions rice noodles
  • 1/2 lbs cherry tomatoes
  • 1/2 lbs mushrooms
  • 1/2 lbs soy beans/edamame
  • 1 tbls oil
  • 2-3 oz baby spinach
  1. Dressing: peel and shred the ginger, crush the garlic (shred or use a garlic press) squeeze the lime, add sambal oelek, soy sauce, peanut butter, sugar, chop the leek and mix all this in a bowl.
  2. Cook the noodles.
  3. Chop the tomatoes.
  4. Chop the mushrooms and stir fry with the edamame in the oil. (defrost the edamame first)
  5. Turn off the heat and add the dressing and noodles in the fry pan, add the tomatoes and spinach. Serve warm or cold, and finish up with some flake salt. If you want more heat to it, just add some more sambal oelek. Yum, enjoy!
